But if you like to experiment with your own variation here is a simple way to prepare chai that only requires a few ingredients.Here is one example of a recipe.1.5 cups of water1.5 inch cinnamon stick2/3 cups of milk3 TBS of Assam Tea Leaves6 TBS of Sugar8 Cardamom pods.25 inch ginger root (fresh and thinly sliced)The first step is to boil the cardamom pods, ginger, cloves, and cinnamon in a pot then lower the heat and let it simmer for 10 minutes. Add the milk and sugar to the mix and let it continue to simmer. The last step is to add the tea leaves. Wait for 4 minutes and you're done.The process is relatively simple, the ingredients are not that hard to find. The tea leaves can be ordered from a shop or online.Assam Black is usually used because of the strong bold flavor is processes but there are others that certainly can be used. Because of the popularity of Chai, many tea companies carry and array of different versions. Depending on your wants or needs will depend on either an herbal version such as rooibos or yerba mate or a traditional version with black tea. The Rooibos variant of this tea originates from South Africa. Unlike the black chai variant, a slice of lemon is mixed with the tea instead of milk. Sugar is not as necessary to the mixture since Rooibos is naturally sweet but it can be used to pull out more spices. Rooibos tea is actually red tea but it can be prepared the same way the black tea is prepared.Yerba Mate is another type of tea that is grown in South America, particularly Northern Argentina and its outlying neighbors all the way down to the Southern Brazil. So all you Dads out there that want to impress with just a simple variation here you go.Ingredients 1 tbsp Gingersnap Cookie Rooibos 2 cups boiling water 2 cups pancake mix (any brand will do) 1/4 cup butter, or as needed 1/4 cup brown sugar 1/2 cup pecan halves (optional)Directions:Steep the rooibos tea in the water for 5-10 minutes; allow tea to cool.Heat a skillet over medium-low heat. Whisk together 1 1/2 cups cooled tea with the pancake mix.Melt 1 teaspoon butter in the center of the skillet. Place 4 to 5 pecan halves into the melting butter. Pour about 1/3 cup pancake batter directly over pecans and butter. Sprinkle 1/2 tablespoon brown sugar over the top of the pancake, and add another thin pat of butter over the sugar.When the edges of the pancake appear dry and bubbles form on the top, turn and cook until lightly browned, about 40 seconds. Remove from pan; add any melted sugar from the pan to the top of the pancake. Repeat with remaining pancake mix, butter, pecans, and sugar.Now serve and collect praise.Makes about 8 pancakes.]]></isc:description>

As many couples can relate, we do not get as much time together as we like so we always enjoy the 3 days we get to spend during Trade Days. I hope all the Mothers had a wonderful Mothers Day on Sunday. There is truly no more important job in the world than to be a mother. I could not have asked for a better mother to me and my brothers or a better mother to our two kidsAs I mentioned, this weekend is Third Monday again and we have an exciting new blend to introduce. As you know, we wanted to brand ourselves as the best herbal tea company. We wanted that to be our niche. By concentrating on herbal tea we hoped that would set us apart from everyone else. We love to be a little different and consider ourselves very open minded. Businesses need to evolve to keep up with society. So we are evolving. We see the tea industry expanding at a very rapid rate. The demand is simply more than the supply. So that being said we are going to slowly incorporate Premium Regular Loose Tea into our selection. We have already added a Jasmine Green tea and have had very good feedback. Our newest blend, Super Fruit Sencha, will be featured this weekend as an iced tea. Sencha is a high grade Japanese green tea. However, our sencha has been cultivated in China under Japanese guidance. The name Super Fruit comes from the pomegranate, blueberry, and gojiberry ingredients. As we continue to grow we do not want to forget our roots. We are still very much an herbal tea company and with this powerful combination we feel like we can create a sustaining business for years to come.***Update: Super Fruit Sencha received great feedback and we will be adding it to our collection*** The showroom has been working out very well and we are happy that many of you have come to visit and pick up some of your favorite blends. Remember to check the website calendar for hours and event information. We have also added a listing on Teamap and Yelp. Feel free to add your reviews. Many of you have expressed the need to have the showroom open in the afternoon to early evening. We want to be very accessible to everyone. Our plan is to be open late at least one night a week so keep an eye out on the calendar for that.In other tea related news it seems that Teavana has taken the steps to go public. Just recently they acquired specialteas.com and their growth has been very rapid. This is good news for the tea industry. Having more people educated about premium loose tea is always a plus. Unfortunately we tend think that's the only thing Teavana does well. Be careful and leave your wallet in the car if you ever visit their store :)We hope everyone has noticed the new shipping rates. The free shipping qualifier has also been lowered to $60. We hope this makes it simpler for everyone. Coming up in late June we have the opportunity to attend the World Tea Expo in Las Vegas.
